Comments: Per interview with employee a large cutting board unable to fit in the dishwater is manually washed in the single bay sink in the kitchen by washing, rinsing, and then pouring bleach directly on to the cutting board and then rinsing. The proper procedure is to wash, rinse, and then sanitize with a bleach and water solution at a minimum of 50ppm and let it air dry. Education provided. All violations must be corrected and are subject to enforcement action.

Dirty mop water may either be disposed of down sink in kitchen or toilets. A disinfection procedure must immediately follow. 2.
