This procedure will be implemented. The required patron notification sign was missing to designate the location of the CPR equipment, so one was provided by the inspector and posted. Many hot food items were measured and found to be the 140 degrees F minimum or well above, Good. Most cold hold food items were temped and found to be 45 degrees or well below, but the bottom portion of the deli unit under the pick up shelf had a tuna and ham salad that measured 46-47 degrees F. It appears to barely be holding the foods at or below 45 degrees F as is required. This same unit appears to create extra condensation so service would be indicated. Must correct all remaining violations no later April 30, 2015, except walk in freezer shelves must be repaired or replaced by June 30, 2015. Must send corrective actions taken to all violations cited in writing to the Glens Falls District Office by 4/30/15. Water comments only: Cannot visually inspect well cap because it is covered in snow, but in discussion with owner, Sally, a sanitary well cap was installed shortly after her last inspection. Operation reports were available and up to date. Free chlorine residual was recorded at 0.4ppm. |
