Using a metal stem probe thermometer, the temperature was recorded at 54 degrees F at 1:45PM. In discussion with Donna, the meat sauce was placed in crock pot to reheat around 1:15PM today. Provided education. Always reheat all precooked foods on the stove to a minimum of 165 degrees F within 2 hours. Then you may hot hold in crock pot at a minimum of 140 degrees F. All remaining violations must be corrected no later than 4/17/15. Must submit something in writing to the Glens Falls District Office addressing corrective actions taken to all cited violations no later than 4/17/15. |
