Comments: This is inspection number one of two for school calendar year 2018 to 2019, and inspection two of two required for calendar year 2018. Todays menu is pancakes, sausage, hash brown. Breakfast for lunch today. Sausage cooking in oven is 170 and rising, its a precooked product. Hash browns at 167and rising, pancakes and french toast are precooked product, temperature at cooking was 158 and rising in convection oven. Walkin freezer is being repaired and all frozen product is being stored at the High School Cafeteria until repair is done. Left over cooked products are refrigerated after lunch which begins 10:42, ends 12:33. Products are cooked as needed, meaning food is prepared and used through the lunch period and staff are taking temperatures of cooked food as it is being cooked and prior to service to assure adequate cooking. Very nice. Reach in coolers are at 40 degrees being opened and shut. Staff advise that if there is left over breakfast from todays lunch, it will be refrigerated and reheated to 165 degrees as required for breakfast 10242018, or discarded.

Comments: This is inspection number one of two for calendar year 2018 and inspection two of two for School calendar year 2017 to 2018. Took temperature of vertical refrigeration unit next to hand wash sink with my thermometer for comparison. temperature adequate at forty matches indicator, which rises and falls as the door is opened and closed. Temperatures of cooked food, tomato soup 150 degrees on left hotel pan not yet served, and 167 on right in service. all okay from can so cook temperature of 140 minimum has been met. Temperature of grilled cheese sandwiches internal was 145 and rising for me and 146 for the batch Linda measured before, both okay. Minimum 140 degrees met.

Comments: This inspection 2 of 2 for calendar year 2017 as required and inspection 1 of 2 for school calendar year 2017 to 2018. Temperature of tow precooked turkey roasts 3 to five pounds each, just out of oven upon arrival at 171 degrees. Two roast cooked minutes earlier out on counter 162 internal temperature. To be processed for sandwiches on the slicer. Then placed in refrigeration. They were too hot to process by gloved hand upon arrival as staff would be burned. cheese pizza crust at 211 degrees and center 208. obviousl the minimum of 140 has been met. Discussed if there are prohibitions to students working at the Penguin Ice machine. There is no violation of the Sanitary Code (10 NYCRR Subpart14-1) for students being in the kitchen; they would be expected to be meeting the requirements of the Sanitary Code. If they do operate the Peguin Ice machine they will be expected to meet the requirements of the Sanitary Code and at a minimum practice adequate hand washing, wear adequate hair restraints and have adequate bare hand contact barriers.

Notes only: Note the hand wash sink that was not operating in previous inspection was corrected and is adequate. Reliable mechanical foot operated water valves were installed and there is soap and hand towels as required. Very nice. Temperatures, cooked corn at service line is 170 degrees. The fresh cook minimum temperatire is 140 and a reheat temperature is going to be 165 degrees minimum if left overs are all reheated and served. Pizza in hotholding oven is 141 Pizza in convection oven not completely through the cook time was 178 and is adequate. Mechanical washer rinse sanitize temperature was 183 degrees.
