Comments: This is inspection number two of two for school year 2018 to 2019 as required. This is inspection number one of two for calendar year 2019. Its pizza day unknown to me. Staff took temperature of pizza at time of inspection, out of oven was 187 degrees. Tina measures every single item after cooking, just to be sure, and I fully concur with that practice.

Comments: This is inspection number one of two for school calendar year 2018 to 2019 and inspection two of two for calendar year 2018. foods are kept at below 45 degrees, walkin cooler milk on top was 34 degrees, turkey slices were thawing, temperature was 31 to 32 degrees. reach in refrigerator by dry goods storage was 44 degrees but is opened and closed frequently at this time of day. pizza and tossed salad for lunch, Staff normal procedure is taking oven cooked food and recording the cooked temperature in log, this was done. Pizza cooked temperature was 186 to 196 degrees of the batch observed by inspector. Taking the temperature of the cooked food to assure adequate temperature is required. Staff meet this requirement. Thanksgiving turkey for lunch on Thursday 11152018. Discussed this at time of inspection with staff. The turkey was fresh, not precooked turkey roll and arrived sometime in a frozen condition. It was cooked that day according to staff to approximately 180 to 185 degrees. Once cooked it was removed from oven and placed whole on baking sheet and placed in walkin cooler for several hours untiI 45 degrees, temperature taken by staff. Same day after cooling it was sliced and placed back on baking sheets covered and placed on shelves of walkin freezer. The cooling process was monitored by staff and walkin cooler has good air circulation for cooling, especially when placed in front of the fans supplying the cool air. Cooling from 120 degrees to 70 degrees internal temperature must be done in 2 hours or less. The cooling from 70 degrees to 45 degrees ust be done in another four hours or less. It appears large pieces of turkey did meet these requirements. It is correct to make the food into separate portions of 6 pounds or smaller during the cooling step. For example, a 20 pound turkey roll could be cut into at least four equal pieces to make less than 6 pounds each and spread apart on baking sheet for the post o

Comments: This is inspection number 2 of 2 for School Calendar year 2017 to 2018 and inspection one of two for calendar year 2018. Vent noted in last inspection has been adequately cleaned, corrected. Staff made a change to fruit service where it is no longer in a hotel pan and served, but put in individual cups with plastic covers for each, and the cold holding temperature was reduced and made consistent from the covers, less heating from ambient air. There were temperature variations noticed by staff that could not be controlled as easily with the mass of fruit. Nice adjustment. Chicken patties in walkin cooler on baking sheets are at 42 degrees for lunch 03092018. Milk is 42 degrees (slipped thermometer probe between the cartons); temperatures of items must be 45 degrees or less. Salads and sandwich wraps are stored in the walkin cooler after preparation and removed for service less than 3 minutes prior to service. The unused containers are placed back in walkin cooler to maintain temperature for next round of students.

Comments: This is inspection number 1 of 2 for calendar year 2017 and inspection 2 of 2 for School calendar year 2016 to 2017. Met with Joy Stahl , Food Service Manager since January,2017. Some basic hygiene policies posted and instituted by Ms. Stahl that will improve operations.

Staff bathroom is combination women/men at this time and has at least one covered waste receptacle as required. Temperature at service line chicken patty at 155 degrees Fahrenheit PIZZA at 146. Precooked chicken patty minimum cook temperature for mass cooking is 140 same for pizza. Hot holdsing temperature minimum 140 degrees has been met. Vegetables and fruit for service are under glass and protected as required. Mechanical diswasher manufacturers specifications met wash 160 degree minimum and rinse 180 degree minimum actual was 195 degrees. Dishwasher if single staff person, needs to wash aftyer handlking soiled utensils prior to handling cleaned utensils.
