Comments: Dumpster closed, no garbage on ground observed. No back up of grease trap observed in drive thru area. Corrected from 2018: 1. The reach in cooler beneath the taco preparation area has correct thermometer, in correct position nearmdoor and towards top. 2. The heated cabinet and preparation table near the taco preparation area are clean now where the two meet. temperature at taco preparation area were all below 45, or above 140 as required. All hot held meats, in chicken area were above 140 as required and ranged from 157 to 168 degrees, they were there at the start of the inspection. The Reduced Pressure Zone Backflow Preventer (RPZ) device after the water meter must be tested and meet requirements in 2019. It must be tested by a NYs certified tester to meeat public water system containment requirements for the Village of Cobleskill public water system. The other device after the RPZ is not required to be tested to meet public water supply requirements.

Comments: Reviewed potato bite time waiver issued by New York State for all Taco Bells. No bites ready yet but staff are familiar with the procedure. Item corrected from 2017 inspection, the utility sink has been adequately repaired. Caution, it takes a lot of use and will always be deteriorating.Temperature taken at hot holding , the potato bites were prepared later in inspection and were at 167 degrees and they are also in a hot holding unit which will maintain temperature, but the door to the unit could be could be open at times, but with the two hour limit, it appears the product would not be out of temperature very long anyway. Chicken in hot holding units was at least 180 degrees. Please correct the items noted above this section by next routine inspection.

Weather stripping on emergency exit door repaired adequately and corrected from 07262015. Correct the violations noted today by next routine inspection. Note continue to pay close attention to out of the way areas, corners under counters, shelves, appliances for regular consistent cleaning as well as floor because of the nature of the fr/ying process. The grease gets everywhere and is hard to clean and requires effort to maintain.
