Cooling procedure is: Big pot of beans and greens. Onions are sauted and room temp beans added then frozen spinach. Take temp when first mixed together to make sure it is 45 deg or below. If not keep beans in cooler. - have all prechilled ingredients prior to mixing. Cut beef into 6 lb or 4" thick to cool properly which is 120 deg F to 70 deg F in 2 hours and then 70 deg F to 45 deg in 4 more hours.
