Owner/operator plans to complete a deep cleaning of the kitchen and equipment. All hot holding temperatures adequate: soups 150F, and steam table items 150-160F. All cold holding adequate, salad prep unit and deli prep unit tomatoes found at 38-40F. Thermometers available throughout. Hair restraints and hand barriers utilized. Sanitizer buckets set up. Restrooms maintained clean and sanitary.
