Chicken stock cooking and cooling at time of inspection, discussed, reviewed, and observed temperatures and procedures. Cold holding prep unit items observed adequate, hummus 40F. Thermometers installed in all refrigerators. Product stem thermometers (3), available and calibrated. Mechanical dishwasher observed to be working as per manufacturer's specs, rinse temp observed 180F. A ceiling has been installed in the wine storage room. Septic system was pumped-out 2-weeks ago.
