Comments: This is a reinspection. Per GM Linda, roasts are now thawed in the walk-in cooler or under cold, free-draining running water, practice of submerging packaged roasts in standing water to thaw has been discontinued per Linds. All observed wet wiping cloths were observed in sanitizing solution. Surfaces of equipment have been organized and cleaned per Linda. Floors and ceilings appear adequately clean and free from dirt and debris. Paper towels observed in use at hand-wash sink, practice of using a common rag has been discontinued per Linda. Vegetable prep sink in corner has been cleaned and is available for use. Indoor walk-in cooler has been reorganized and cleaned, floor of cooler has new liner. Personal items have designated space at desk in rear. Exterior shed where paper items are stored has been reorganized, large gaps have been filled with spray foam. All items in rear kitchen are stored off of floor at time of inspection. Per Linda, previous pest management company has been replaced with Erich. Owner shall send, fax, or email pest management reports to this office until further notice. Methods for eliminating barehand contact in kitchen, especially the fry station, were discussed at time of inspection. 2
