Observed cartons of milk in cold-holding unit on service line at 43F and less. Observed chicken nuggets fully cooked to 174F using facility's digital thermometer. Sanitizer bucket contained quaternary ammonia with an appropriate level of 200ppm and checked using facility's test strips. Facility's high-temperature dish washer reached final rinse temperature, more than enough to sanitize utensils and equipment, at 192F. Observed staff properly using glove and utensils to prevent barehand contact with ready-to-eat food.

Observed PHF/TCS cold held items including cut melons and milk at temperatures of 45F or less in cold holding units with thermometers. Observed temperatures logs and properly functioning digital thermometer. All items in walk-in cooler stored off floor and condenser unit's fan cover was clean and free of debris. Observed previously cooked and cooled pasta in walk-in cooler at temperature of 38F throughout. Rinse temperature of dish washing unit reached temperature of 180F. Observed adequate levels of quaternary ammonia (300ppm) in wiping cloth bucket using facility's test strips. Hand washing stations fully stocked with soap and paper towels. Observed employee using gloves and utensils when serving food to students on the service line.

Employee was works on a maximum of 3 salads at a time, for a period of no more that 20 minutes, and places them directly into walk-in cooler to be stored until service of lunch. Observed staff using gloves when preparing pineapple. Discussed routine maintenance and cleaning of surfaces inside walk-in cooler. Observed hot holding bays on service line being warmed prior to use.
