Comments: Time table of correction for all items established for 2/15/19. Reviewed and observed cooling procedures with operator. Foods are cooled at shallow depths(less than 4 inches) in metal pans in walk-in cooler to meet cooling schedule of 120-70F in 2 hours, then 70-45F in an additional 4 hours. Advised cook that hands are to be wash adequately with warm water and soap following handling/preparation of raw meat and raw shell eggs. Advised staff that hands should be washed between glove changes to prevent cross contamination to new gloves.

Comments: Conducted a re-inspection of facility and also conducted a HACCP training with kitchen staff. Both cooks were observed properly using plastic gloves while working in kitchen. Also observed waitress staff during re-inspection, no improper bare-hand contact observed while serving foods to patrons. Discussed glove use and routine hand washing with kitchen staff during re-inspection. Violations from previous inspection report of June 13, 2018 corrected- did not verify correction of Blue Item # 14B (door sweep in rear dry storage room).

Discussed routine hand washing and proper use of plastic gloves and utensils with cook staff during inspection. Digital thermometer available for checking hot potentially hazardous (TCS) foods. A Time Table of Compliance Date of June 22, 2017 has been established to correct the violations listed above. A re-inspection will be conducted after this date to determine compliance.

The following items, which had been violations during inspection conducted 2/19/16, were not observed in violation at time of re-inspection: #5A for improper use of cold-holding waiver to use time instead of temperature for public health control-all items under cold-holding waiver were marked with discard time, which per food worker, was 4 hours after removal from refrigeration; 5B-for improper cooling and cooling methods-soups observed cooling in shallow pan in walk-in refrigerator, which are then poured into deep containers and covered after fully cooling to 45F or less, per food worker; 2E-for inaccurate probe thermometer-electronic thermometer obtained, used in kitchen. Also, new door gaskets obtained for 2-door commercial refrigerator, which had been under timetable for correction for 4/30/2016.

No other items evaluated during re-inspection. Briefly discussed cooling with cook, who indicated all cooling was conducted in uncovered metal pans at depths of less than 4 inches.

Sanitarian to contact operator in near future to schedule HACCP exercise.
