(HS) Discussed with operator the details of the requirement that food products not be stored on the floor. This in response to having trucks come in for delivery and having to unpack/portion/inventory foods, often while food preparation is underway, and in small walk-in spaces. Staff understanding is accurate and current methods are sufficient to support public health.
